Vegan Peanut Butter & Banana Chia Pot
If you are anything like me, I had you at peanut butter. During my university days, my friends and I would stock up on single serve Jif Peanut Butter packs from meal hall and eat them with bananas, apples, or just straight up... Likely when we were stressing about an organic chemistry midterm or what matching costume we would wear to the halloween party. Balance, right? Lately, I love stuffing Medjool dates with peanut butter for a sweet summit treat while hiking or before teaching a yoga class. Another favourite way to use peanut butter: mix Greek yogurt with peanut butter, cinnamon, and maple syrup to make a lovely fruit dip. Don't even get me started about peanut dipping sauces!
However, My ABSOLUTE favourite peanut butter recipe is this Vegan Peanut Butter & Banana Chia Pot. It is like a reliable friend that never lets me down. Satiating, convenient, and downright delicious! Okay, maybe not like a reliable friend... I don't eat my friends...although I'm sure they are tasty in their own way <3 These chia pots are my weekday go-to breakfasts. I like to top them with Greek yogurt (not vegan) and Top Secret Granola. BOOM! Ready to tackle the day.
Vegan Peanut Butter & Banana Chia Pot
Makes 1 Serving (I like to make 4 mason jars for easy, grab and go breakfasts during the week)
Ingredients
1 small ripe banana or 1/2 large banana
2 tbsp chia seeds
2tbsp natural peanut butter (I used smooth)
1 tsp maple syrup
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/4-1/3 cup large flake oats
3/4 cup almond, soy, or coconut milk
Optional Toppings:
Sliced banana
Greek yogurt
Fresh of frozen berries
MORE peanut butter
Method
Combine banana, chia seeds, peanut butter, maple syrup, vanilla, and cinnamon together in a wide mouthed mason jar or container. Mash together with a fork until mixture is relatively smooth.
Add large flake oats and milk of choice to banana mixture and mix until combined. Allow to soak at least 30 minutes or overnight in refrigerator. Eat within 3-4 days.
Prior to serving, add desired toppings. Enjoy!
