Eating should be mindful and food shouldn’t be complicated. Here are a few of my thoughts and resources you can try at home.
Halloumi & Honey Roasted Carrot Bowls
This bowl was love at first bite. Now it’s my absolute favourite go-to meal that feels a little fancy, and is the perfect balance of nourishing and satisfying! This recipe is perfect for a chill Friday night, hosting friends for dinner, or meal prep (dressing separate until ready to eat).
Chocolate Avocado Bliss Balls
have been making these bliss balls for a few years. Sharing them with friends and watching their reaction as they take a bite always brings a smile to my face. Imagine a truffle-like, just-sweet-enough ball of goodness. This is an excellent way to use up ripe avocados if you got a little too excited at the groceries store.
Indonesian Gado Gado
Two dishes that I tended to gravitate towards when I was travelling Indonesia is Gado Gado and Nasi Campur. Gado Gado can be described as a medley or potpourri, or vegetable salad with peanut sauce. It usually comes with rice, tofu and/or tempeh, and shrimp crackers on the side
Red Thai Peanut Curry
I love creating new recipes, but I have a few tried and true options that I used all the time and have adjusted over time to fit my preferences. I love this recipe because it comes together quickly in one pot, and delivers serious flavour! One of my favourite memories from creating this meal is when we made this a few weeks into the lockdown in March 2020 and had just gone to get fresh ingredients and this curry was the excitement of the night. Oh the simple things.
