Chocolate Avocado Bliss Balls
I have been making these bliss balls for a few years. Sharing them with friends and watching their reaction as they take a bite always brings a smile to my face. Imagine a truffle-like, just-sweet-enough ball of goodness. This is an excellent way to use up ripe avocados if you got a little too excited at the groceries store and bought half a dozen and can’t eat them fast enough! My favourite is keeping these in the freezer and eating them slightly thawed. YUM!
Chocolate Avocado Bliss Balls
Yields: 12-20 balls depending on size
Ingredients
1 avocado (approximately 1/2 cup)
10 Medjool dates or prunes (or a mix of both. Don’t forget to remove pits!)
1/4 cup cocoa powder
1/2 cup creamy natural peanut or almond butter (or any nut butter you like)
1/2 tsp vanilla
sprinkle of sea salt
1/4 cup mini dark chocolate chips (or whatever you have on hand)
1/2 cup shredded coconut (I used unsweetened)
Method
Prepare a large plate or baking sheet with parchment paper.
Add dates or prunes to food processor and pulse until coarsely chopped.
Add avocado, cocoa powder, nut butter, vanilla, and sea salt. Blend until a thick smooth dough forms, scraping down the sides periodically.
Mix in chocolate chips by hand and scoop into about 1 tbsp (for closer to 20) or 2 tbsp (for closer to 12) balls. Roll in shredded coconut, and place on parchment lined plate or baking sheet. Refrigerate for 30 minutes or freeze for 10 minutes until firm. Keeps in the freezer for one month. Enjoy!
